Jai Alai IPA is a monster interpretation of an American IPA. In fact, it is so big that it equals the alcohol of some double IPAs on the market. Our IPA uses 6 different hop varietals, with Simcoe hops being used only for dry-hopping. The rest of the hop additions are blended at different IBU's in groups of three hops per addition in order to create more complexity. At CCB, we love hops but also feel that balance is important for IPAs. So Jai Alai features a sturdy caramel malt component which helps to create the desired balance and stave off undesirable hop astringency. Ultimately, Jai Alay is a very strong interpretation of a single American IPA. We hope that it makes Tampa Bay area natives happy because this is head brewer Wayne Wamble's favorite Cigar City beer and he'd love to brew more so he can share one with you.
Tasting notes: Apricot, peach and a melange of citrus blast forth as you nose this one. The flavor profile opens up front with citrusy notes with hints of tangerines, grapefruit and kumquats then moves into caramel sweetness with light notes of toasted sweet bread finishing with a continued assault of more citrus bitterness that begins to move towards apricots and peach int the finish with a slight toasted note at the end of the flavor profile.
