Deja Vu is a showcasing of how the dry profile of brettanomyces works with dark and roasty malts on relatively high ABV. It's made from cold-infusing the brew water with dark malts for a few days and then using it to brew a regular style farmhouse ale. The result is a pitch black beer, with lots of roast and toast, but with no heaviness at all. It actually drinks quite easily.
Unfiltered, unpasteurised and 100% bottle conditioned.
Grains: Pilsener, Caramunich, Wheat Malt, Chocholate malts, Smoked malts,
Hops: Chinook and Tomahawk
Fermentation: Mix of brettanomyces and Saccharomyces strains
