Fruit from Estate Wallcliffe and Trinders vineyards

VINIFICATION
Dependent on vintage. Techniques can include some hand picked fruit and use of whole bunches in fermentation. Basket pressed and maturation in a combination of French and American oak barriques (35% new) for up to 18 months.
