VARIETIES: Cabernet Sauvignon 100%

MATURATION: The grapes are harvested and crushed to must on site in South Australia. The must is chilled and transported 1600km to the Hunter Valley to complete the process. This extended cold-soaking greatly contributes to the wine's texture and complexity. The wine was matured in new French oak (Francois Frere and Treuil) for 14 months.

VINEYARD/SOIL: Wrattonbully adjoins the Coonawarra area in the southern part of the Limestone Coast wine zone. The prominent viticultural feature of the area is the series of ancient beach ridges and dunes which run roughly north-south through the area. These ridges are made up of soft crumbly limestone which weathers to produce the red and brown Terra Rossa clay loam soils so highly prized for grape growing. The ridges and dunes have elevations of up to 30m compared with the Coonawarra Terra Rossa 'high' of less than 5m. The extra elevation on the Wrattonbully dunes, produce the advantage of cold air drainage which reduces the risk of frost during the growing season.

Notes: The fruit for this wine was carefully selected from specifically identified parts of the vineyard. The selection process commences as early as fruit set and is continually monitored on-site right up to harvest. The grapes are then separated to batches and, where required, treated individually with the technique that will offer the greatest enhancement. This wine has both power and elegance, rarely seen from a region that is known for more robust styles. Its structure is unique with an unbelievable palate length following the many layers of its complex palate. Careful cellaring will see further improvement.
