Beskrivning: Har en elegant och raffinerad stil. Har fruktkaraktär med ren frisk citrussmak av lime och grapefrukt. Bakomliggande smak av ek och lätt rostat bröd har skapats genom lagring på ekfat från Bourgogne.
Övrigt: The grapes are destemmed and crushed at cold temperatures and the juice pressed off the skins and left to settle for 72 hours. Fermentation is started in stainless steel tanks and maintained at a temperature of 12-13ºC until approximately half way through the fermentation. The wine is then transferred to Burgundy oak barriques and left to complete the fermentation at cool temperatures. Malolactic fermentation is avoided to create a tighter more minerally palate and bâtonnage (lees stirring) applied for fullness and a creamier mouth feel.
Maturation:
100% matured in barriques (228L) for approximately 9 to 10 months using a blend of 4 Burgundy cooperages. The oak used is predominantly Allier origin and is specified to medium toasting. New oak-40%, 1st fill-30%, 2nd fill-30%.
